Lemon Poppy Seed Protein Pops [Gluten Free + Vegan]
In hopes of keeping the fresh, fruity summer flavors around as we head into the autumn season, I made vegan, gluten free, and grain free protein bites that taste just like a Lemon Poppy Seed muffin, but are much better for you! They only take about 10 minutes to make, and contain a well-rounded blend of healthy plant-based protein, fats and carbs from MRM Veggie Meal to keep you satisfied. Skip the sugar crash from the store bought muffin and go for a few of these, instead!
Lemon Poppyseed Protein Bites
Gluten Free, Grain Free, Vegan
Makes about 20-22 bites
You will need:
- 2 scoops MRM Vanilla Bean Veggie Meal
- 2 tbsp coconut flour
- 2 tsp poppy seeds
- 1/2 tbsp erythritol (or granulated sweetener of choice)
- 2 tbsp fresh lemon juice (about 1 medium lemon)
- 1 tsp lemon extract
- 6-8 tbsp water (enough to make a thick dough)
Directions:
- Sift the MRM Veggie Meal and coconut flour into a bowl.
- Add the poppy seeds and erythritol whisk until incorporated.
- Add the wet ingredients to the bowl and mix well until the liquid is absorbed.
- Form into 20-22 protein bites and refrigerate for 30 minutes to set.
- Store refrigerated in an airtight container for up to a week, or freeze and enjoy them for longer!
