Fudgy Double Chocolate Mocha Protein Brownies [Gluten Free + Vegan]


Brownies... one of America's favorite desserts! Unfortunately, most brownie recipes are loaded with processed starches, sugars and unhealthy fats that contribute to weight gain. Luckily, these brownies are full of healthy, plant-based ingredient - high in fiber and protein, antioxidants, magnesium, potassium, vitamins A and C - can't get much better!



Fudgy Double Chocolate Mocha Protein Brownies
Flourless, Gluten Free, Grain Free, Vegan, Oil Free
Makes about 9 brownies



You will need:

  • 2 medium-sized cooked beets
  • 1/2 can 100% pumpkin puree
  • 1.5 tbsp coconut flour
  • 1/2 cup MRM Chocolate Mocha Veggie Meal Replacement

  • 1/4 cup 100% carob or cocoa powder
  • 2 droppers liquid stevia
  • 2 tbsp raw cacao nibs
  • raw dark chocolate bar or chips

Directions:
  • Preheat your oven to 375F.
  • Grease or line a standard loaf pan (NOT a brownie tray - there is not enough batter!)
  • Place beets, pumpkin, coconut flour, MRM protein, carob or cocoa, and stevia in a food processor and blend until a thick batter forms.
  • Scrape down the sides and continue to process until all ingredients are incorporated.
  • Scoop batter into a mixing bowl and fold in the cacao nibs
  • Pour batter into the loaf pan and spread evenly
  • Chop a few square of chocolate into chunks (or just use raw chocolate chips) and sprinkle onto the top of the brownies
  • Bake for about 1 hour, or until the top has hardened and a knife comes out clean.
