Decadent Cashew-Baobab Protein Cookies [Gluten Free + Vegan]


These cookies are literally SO. GOOD. Sweet little bites of delicious, healthy, plant-based perfection - decadence without the guilt! Using a mild nut butter like cashew butter really brings out the distinct flavor profile of MRM baobab, which blends perfectly with MRM Vanilla Bean Veggie Meal protein. Baobab powder contains high levels of Vitamin C, which helps support the immune system and enhances alertness and energy. Fudgy Cashew-Baobab Protein Cookies
Makes about 7-8 cookies

You will need:



Directions:
  • Preheat your oven to 350F.
  • In a medium bowl, combine the MRM protein, erythritol, baobab, baking powder and salt, then whisk to combine.
  • Melt the coconut oil and add it to the bowl with the cashew butter and milk.
  • Using a spoon first, begin to mix the batter.
  • Once the dry ingredients begin to absorb the liquid, the batter will become thick and quite sticky.
  • Wet your hands with warm water and continue to mold the dough with your fingers until everything is incorporated.
  • Scoop about 7-8 cookies onto a greased or parchment-lined cookie sheet, and flatten each to form a circle.
  • Bake for 15-20 minutes until the cookies are browned on the top.
  • Let cool COMPLETELY - they'll be soft to the touch when you remove them from the oven but will harden as they cool.
  • Store in an airtight container in your fridge for up to a week, or freeze for longer life.
