You will need:


Directions:
  • Preheat an omelet pan over medium heat and melt coconut oil.
  • Place all ingredients into a bowl and beat with a hand mixer for about a minute
    • Alternatively, you could whiz the ingredients together in your food processor or blender, if you don't have a hand mixer
  • Pour mixture onto the pan and cook until the top sets, about 5 minutes.
  • Carefully flip the entire omelet and cook for another 20-30 seconds, until both sides are nicely browned.
  • Place on a plate and stuff with nut butter, yogurt, etc
  • Fold in half, and dig in!
