Chocolate Mocha [No Bake] Protein Truffles




No-bake recipes are some of the fastest, easiest, most delicious and nutrient dense foods you can make! When you can just throw a handful of wholesome, plant-based ingredients into a food processor and create a delicious, decadent (but healthy!) treat, I call that a success. These truffles are just that – chocolatey, fudgy goodness! Loaded with plant protein and healthy fats, you can enjoy your dessert without the guilt. They’re perfect to bring to a party, to snack on at work, and are even healthy enough to eat post-workout!


Chocolate Mocha [No Bake] Protein Truffles
Gluten free, dairy free, vegan
Makes 8 truffles



You will need:
  • ½ ripe avocado (no black spots)
  • 1.5 scoops Chocolate Mocha Veggie Elite
  • ¼ cup pureed silken tofu
  • 5-7 drops liquid stevia
  • 1-2 tbsp non dairy milk (if needed)


Directions:

Place all ingredients (besides the milk) into a food processor. Blend until a thick ball of “dough” forms. If the dough is crumbly, add 1 tbsp non dairy milk at a time until it forms a pizza-dough consistency. Scrape down the sides of the processor as needed to incorporate all ingredients. Using a 1.5” cookie scoop, form 8 truffles and place them on a small baking tray. Refrigerate for a few hours to set, or store in your freezer if you made a larger batch!

Feel free to roll these truffles into shredded coconut, chia, or hemp before refrigerating for a yummy coating!
