Christmas Spiced Pancakes [Grain Free]


I have a new pancake recipe for you all! These pancakes have a mix of warming spices and are a perfect for a Christmas morning breakfast with the family. They are free of gluten, grains and refined sugars, and can easily be made dairy free. I hope you enjoy.



Serves 1

You will need:

Dry Ingredients:

  • 3 tbsp coconut flour, sifted (I use Bob's Red Mill)
  • 1 tsp maca powder
  • 2 tsp lucuma powder*
  • 1 tsp mesquite powder*
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp baking powder

Wet Ingredients:
  • 1 egg
  • 1/2 cup egg whites (from the carton, like All Whites)
  • 1/4 cup plain kefir 
    • sub canned coconut milk for a dairy free option
  • 1 tsp vanilla extract


Directions:
  • Preheat a skillet over medium heat and melt a bit of coconut oil to coat the bottom.
  • Sift all the dry ingredients into a medium mixing bowl.
  • In a separate bowl, whisk together the wet ingredients until combined.
  • Pour the wet ingredients into the dry, and whisk until well incorporated - the batter should be smooth with no clumps.
  • Turn the heat down to medium-low and pour 1/4 cup of the batter onto the center of the pan.
  • Let the pancake cook for a few minutes, until bubbles form on the top.
  • Flip and cook another 30s - 1min until both sides are browned.
  • Repeat with the rest of the batter until it's gone.

*Feel free to omit these ingredients if you do not have them, but sub another 1 tsp of coconut flour. I like these ingredients for the additional depth of flavor they add, but the pancakes will still taste good without them!

  1. Looks and sounds so amazing! But I don't really get how 3 tbsp of flour would make that many pancakes??

    1. thank you! they are small pancakes, only about 3 inches in diameter, and coconut flour absorbs about 2 times the amount of liquid than regular flour so the batter expands a lot. :)
