Grain Free Muesli


There are many mornings when I am either:
1) in a hurry to leave the house for school/work, or
2) too lazy to cook something (not going to lie, it's usually this)
It is morning's like these when I need something quick, filling and super nutritious for breakfast. This grain free muesli does the trick! It's easy to prepare ahead of time, too, so you can store it in the fridge overnight and just grab it in the morning! Loaded with natural fiber, healthy carbohydrates and fats, it will give you tons of energy for the day. There are absolutely no grains or gluten in sight, and it could easily be made vegan by subbing your favorite non-dairy yogurt!

Serves 1


You will need:

  • 1 large apple, chopped into large cubes
  • 1/8 cup chopped walnuts*
  • 1/8 cup chopped pecans*
  • 1/8 cup pistachios*
  • 1/2 tbsp desiccated coconut
  • 1/2 tbsp chia seeds
  • 1/4 tsp cinnamon
  • optional: 1 tsp Organic Burst maca powder
  • 1/4 cup plain cultured kefir
    • for vegan, sub 1/4 cup of your favorite non-dairy yogurt
  • additional fruits and toppings of your choosing

Directions:
  • Wash and chop your apple into large cubes, keeping the skin on.
  • Place it in your food processor, then pulse a few times to shred the apple slightly. 
  • Add the remaining ingredients, besides the kefir (or yogurt), to the food processor, and pulse again until combined.
  • Scoop into a bowl and stir in the kefir (or yogurt).
  • Top with fruits, nut butter, more yogurt, or anything else you want!
*You can use any mixture of your favorite nuts and seeds
