Chocolate-Covered Coconut Snowballs
Happy Thanksgiving everyone!! If you are looking for an easy, delicious treat full of healthy, natural ingredients, look no further! These chocolate-covered coconut snowballs are made of only a handful of ingredients, they're gluten free, vegan, and there is no cooking required!
Makes about 14-16 Snowballs
You will need:
- 1/2 cup melted coconut butter
- 3/4 cup unsweetened shredded coconut
- 1 tbsp coconut flour
- 3 tbsp maple syrup
- 2 tbsp full fat coconut milk
- 1/2 tsp vanilla extract
- pinch salt
- a bar of your favorite chocolate to melt for coating
- I used Julian Bakery paleo chocolate
Directions:
- Melt the coconut butter and place it in your food processor.
- Add the maple syrup, coconut milk, vanilla extract and salt and blend to combine.
- Add the shredded coconut and coconut flour, blending again on high speed, until the batter forms a dough. Add more coconut flour if the dough seems too thin.
- Scoop into a bowl and place in your freezer or fridge for 5-10 minutes to harden up and make the dough easier to shape.
- Once cool, shape the dough into bite-sized balls and place them on a tray, then put the tray into your freezer to harden (about 20 minutes).
- While the snowballs harden, melt your chocolate in a bowl over a small saucepan with boiling water.
- Remove the snowballs from the freezer and dip them in the melted chocolate.
- Quickly sprinkle on more shredded coconut for garnish before the chocolate hardens.
- Store in an airtight container in your freezer.
- Remove from the freezer 1-2 hours before serving.
