Cinnamon Roll Pancake [Gluten & Grain Free]


Calling all cinnamon lovers! I've got a delicious, healthy pancake recipe for you that tastes like your favorite bakery's cinnamon roll, but you don't have to feel guilty for eating it! What really makes this meal is the Sweet Spreads Cinnamon Roll coconut butter that I drizzled all over the top. It's the perfect healthy topping to fully complete the 'cinnamon roll' experience! Serves 1
Gluten free, Grain free

You will need:

  • 2 tbsp coconut flour, sifted
  • 1/4 tsp baking powder
  • sweetener of choice, to taste
  • 2 tsp maca powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup + 1 tbsp carton egg whites
  • coconut oil for the pan


Directions:
  • Preheat a pan over medium heat and melt a dollop of coconut oil.
  • In a bowl, sift the coconut flour and add the baking powder, sweetener, maca, and cinnamon, then whisk to combine.
  • Pour in the egg whites and vanilla extract, then whisk until clumps are gone and the batter is smooth.
  • Let the batter sit for a few minutes so the coconut flour can absorb the liquid.
  • Turn the heat down slightly and pour the batter onto the pan to make one giant pancake. You could alternatively use 1/8 cup of batter to make small pancakes.
  • Let the pancake cook until the top starts to set and the bottom looks browned, approximately 5 minutes.
  • Carefully flip and cook on the other side until nicely browned.

  1. Hi Casey! Do you know how you would make some of these pancake recipes vegan? I have read you can make a flax or chia egg, but these never work in holding my pancake together! Any advice?!

    1. Hi Olga! The only vegan alternative I've heard of for an egg is the chia or flax egg. For this recipe, I'd suggest 3-4 flax eggs! Make them the night before and keep them in your fridge so they're nice and thick in the morning :) I hope this works for you!
