Chocolate and Peanut Butter Banana Tofu Soft Serve


If you're craving something cold, sweet and refreshing on a hot summer day (like banana ice cream) but want more of a balanced snack, this tofu soft serve is the perfect option! Tofu adds a dose of healthy protein to help keep your tummy full and satisfied, raw cacao powder packs in awesome antioxidants, peanut butter adds the perfect amount of healthy fats, and frozen banana finishes off this creamy, delicious treat!  It's super light and fluffy while still having a rich, chocolatey peanut butter flavor!



Serves 1


For the Peanut Butter, you will need:

  • 3-4 ounces light firm tofu
  • 1/2 RIPE, frozen sliced banana
  • 1 tbsp all natural peanut butter OR 2 tbsp peanut flour
  • 1/4 tsp sweetener of choice (coconut sugar, stevia, etc)
For the Chocolate, you will need:
  • 3-4 ounces light firm tofu
  • 1/2 RIPE, frozen sliced banana
  • 1 tbsp raw cacao powder
  • 1/4 tsp sweetener of choice
    • I actually added a bit of lucuma powder (a natural, low-glycemic sweetener), and it was delicious!

Directions:
  • Start with your Peanut Butter soft serve. Place all ingredients in a food processor and blend until the bananas smooth out. 
  • Stop the processor and scrape down the sides a few times to incorporate all the ingredients. 
  • Scoop into a bowl and place in your freezer while you make the Chocolate soft serve.
  • Repeat the same directions with the Chocolate ingredients, then scoop into the bowl with your peanut butter soft serve and dig in!

  1. Hi! Do you always eat all this for your meal? Are you strictly vegan and gluten free? Do you ever go out and eat? If so, how do you choose what to eat to ensure the food is gluten free etc? Can you write a blog post about it?! :D

    1. Hi there! I am not vegan at all, but I am gluten free! and this would just be a snack for me, actually!

      I eat animal products such as eggs, meat and fish. I do go out to eat, and usually I pick a restaurant that I know will offer gluten free meals, or I call the restaurant before hand and ask questions about how they prepare the food (cross-contamination, etc). I pretty much know by now what foods are gluten free and what foods aren't, so I'll choose simple meals that look like they contain only gluten free items, like a piece of meat or fish with a side of veggies! :)
