Strawberry Banana Protein Ice Cream

This huge bowl of banana ice cream was the best lunch on a hot day!! The combination of flavors were incredible together. This is a perfectly balanced meal - you'll find lots of natural carbs, protein and healthy fats, and even though you'll FEEL like you're eating dessert, you have nothing to feel guilty about!

I am a firm believer in never depriving yourself of foods that you want, including chocolate!! Rather than going for the milk chocolate Hershey's bar that is laden with refined sugars, it's so worth it to spend a little extra on the raw, super dark chocolate (at least 70% cacao). This kind of chocolate is chuck full of antioxidants, healthy fats, and is also a great anti-inflammatory food! Get yourself some raw dark chocolate people, you'll thank me later!

I topped this bowl with the best tahini I've ever had - a big "Thanks" to Stephanie over at Soom Foods for her generous gift! - fresh raspberries, and of course, dark chocolate chunks!

Serves 1

You will need:

  • 2 RIPE, frozen and sliced bananas
  • 1 cup frozen strawberries
  • 3-4 tbsp milk of choice
  • 1 scoop vanilla protein powder (30g)
Toppings:

Directions:

At least 5 hours prior to making the ice cream, peel and chop your bananas into small 1/2 inch pieces and place them (in a single layer) into a large zip lock bag. Put this in your freezer until you're ready to make the ice cream.

Remove the bananas and frozen strawberries from the freezer and place them, with the milk, in your food processor and process. You will have to scrape down the sides a few times to get everything incorporated. Be patient with this, as it takes a while for the fruit to smooth out and become more of an ice cream consistency. You may need to add more milk to smooth it out, just use your judgement.

Once the chunks are gone and the ice cream is a smooth pink color, add the protein powder and continue to process until everything looks combined. Scoop into a bowl and top with tahini, raspberries and chocolate!

Enjoy! :)
