Raspberry Tofu Soft Serve "Ice Cream"


I always crave something cold and refreshing after a serious workout, and I was looking forward to a big bowl of banana protein ice cream! However, with no ripe, frozen bananas for ice cream, I improvised with frozen raspberries and soft tofu. This recipe is super easy and uses only a few healthy ingredients. It's gluten free, as well as vegan!



Serves 1


You will need:

  • 1/2 container firm or lite firm tofu (about 7 ounces)
  • 1 cup frozen raspberries
  • 3-4 tbsp non-dairy milk of choice
  • 1/2 tsp sweetener of choice (stevia, coconut sugar, etc)
  • toppings of choice

Directions:

Break apart the tofu and place it in your food processor. Add the raspberries, milk, and sweetener and process until smooth. You may need to scrape down the sides to make sure the tofu and raspberries are fully incorporated. Feel free to adjust the amount of milk to achieve the right consistency.

Spoon into a bowl and stick it in your freezer for a few minutes to set. Top with whatever you like - I used fresh raspberries, pistachios and raw dark chocolate chunks!

  2. Hi there, of course! I use Nasoya brand which is a 14 ounce container, so half of the container would be 7 ounces :)
