Loaded Sweet Potato Rounds


Sweet potatoes are one of my absolute favorite foods!! I love how versatile they are, you can eat them savory or sweet and they'll compliment the dish perfectly. My favorite way to eat a sweet potato is simply roasting the whole thing in the oven for about an hour until it gets perfectly soft and mushy, but we don't always have the time or energy to wait an hour! That's why I created these "loaded sweet potato rounds," they take about 15 minutes to make and you can put whatever toppings you want on them, even make little sweet potato "sandwiches" out of them!! They would make a great appetizer or side dish, as well!



Serves 1

You will need:

  • 1/2 medium sweet potato
  • a bit of melted coconut oil
  • your favorite spice(s)
    • I used cumin for the savory rounds
  • toppings of choice

Directions:

Preheat your oven to 400F. Cut your sweet potato into 1/2 inch thick rounds. The thinner you make the rounds, the faster they will cook! Line a baking tray with tin foil, grease lightly, and lay on the rounds. Brush on a thin layer of coconut oil and sprinkle the top with your spices. Place in the oven (it's ok if it's not preheated fully) for about 15 minutes. Flip the rounds halfway to cook evenly. Once the rounds are lightly browned and start oozing slightly, remove from the oven and top with whatever you like! 

I did mine 3 ways: 1 topped with hummus and crispy edamame, 2 topped with mashed avocado, cherry tomatoes and chickpeas, and 1 topped with peanut butter and cinnamon (aka, dessert).
