Vanilla Maca Cinnamon Porridge


I think it's about time I posted some new recipes, what do you think?! This is Vanilla Maca Cinnamon protein porridge with pear, strawberries, blackberries, white mulberries, and peanut butter. Maca powder is a superfood known to nourish and balance the body's delicate endocrine system, and to help cope with stress. It also energizes naturally, without the jitters and crashes of caffeine, and it can aid in reproductive function, helping to balance hormones and increase fertility.
For my Vanilla Maca Cinnamon porridge, you will need:

  • 1/4 cup buckwheat flakes
  • 1/4 cup TVP (I use this for added protein)
    • this recipe will also work with 1/2 cup oats or buckwheat flakes
  • 3/4 - 1 cup water, depending on your preferred consistency
  • 1/3 cup egg whites
  • 1 pear
  • 1 tsp Maca Powder (omit if you don't have this)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Directions:

In a small sauce pan, bring water to a boil. Add your buckwheat and TVP (or oats) and lower heat, allowing to thicken, approximately 3-5 minutes. While this cooks, cut your pear in half. Put one half aside, and chop the other half into small pieces. Add vanilla extract, maca, and cinnamon and stir. Mix your pear chunks into the porridge, and stir to soften the fruit. Allow to cook for another few minutes until the porridge has thickened, then pour in the egg whites. Stir occasionally until the egg whites cook and the porridge becomes fluffy. Cut up the other half of your pear and add any other toppings you like!
