Sweet Maca Cinnamon Omelette + Topping & Filling Suggestions
After trying a sweet omelette I don't think I'm every going back to savoury. Who knew eggs could taste so good with fruit? This is a perfect breakfast option for those who want to fill up on protein in the morning, and would also be a great choice for a post-workout meal. You can make any variation your heart desires, I can't wait to try a chocolate version!
Eggs are an excellent source of protein and healthy fats. Don't hate on the yolks, they contain one of the richest sources of choline, a B-complex vitamin, which promotes normal neurological functioning and helps produce the "happiness" hormones like serotonin and dopamine. Egg yolks are also high in sulfur, which produces collagen and keratin, promoting shiny hair, strong nails, and glowing skin. Of course, the yolk does contain high amounts of cholesterol compared to other foods, but when eaten in moderation and limiting saturated fats in the rest of your diet, there is nothing wrong with eating eggs every day!
Serves 1 - Adapted from Amy Crawford's Sweet Omelette recipe at The Holistic Ingredient
You will need:
- 2 eggs
- 1 tsp cinnamon
- 1 tsp maca powder
- 1 tsp vanilla extract
- 1 tsp sweetener of choice (I used coconut sugar)
- 1 tsp coconut oil (for pan)
Directions:
- For the omelette, heat a small frying pan (mine was 7") over medium heat and melt coconut oil to coat the bottom.
- Place all ingredients in a medium sized mixing bowl. If you have time, beat with a hand mixer for about 30 seconds. This will make the omelette nice and fluffy. Whisking will work as well, but the omelette may not turn out as fluffy.
- Pour the eggs into the pan. Once the edges of the omelette have firmed, pull up the edge with a spatula and tilt the pan so the runny egg dribbles under the cooked portion. Do this around the whole omelette it cooks evenly.
- Once it looks cooked through, flip the whole thing with a large spatula and let cook another minute or so.
- Place the omelette on a plate and fill with anything you want! Yogurt, nut butter, and berries would be fabulous!
TOPPING AND FILLING IDEAS:
The first photo uses berries, pecans and homemade Raw Chocolate Cashew Butter:
Ingredients:
- 1 tbsp raw cacao powder
- 1 tbsp cashew butter
- 1 tsp granulated sweetener
- warm water
Directions:
- Place the cacao powder and sweetener in a small bowl and drizzle a little warm water over it, stirring constantly until it absorbs the water and becomes a sauce.
- Add in the cashew butter and stir to combine. It will be a thick paste-like consistency at this point.
- Add another drizzle of warm water while you stir to achieve a smooth, more pourable texture.
This photo uses Greek yogurt, strawberries and caramelized banana:
For caramelized banana:
- 1/2 banana
- 1 tsp coconut oil
- granulated sweetener of choice
Directions:
- Heat a fry pan over medium heat and melt coconut oil. Cut your 1/2 banana length-wise into 4 thin strips. Place in the coconut oil and sprinkle on coconut sugar. Let the bananas fry in the oil, then flip after a minute or 2. Keep an eye on them, and once each side is browned, they should be done.
Dig in and enjoy!
