Protein Packed Blueberry Acai Parfait


This was one of the most delicious and satisfying breakfasts I've had in a long time. I can tell it will be a staple in my diet once the weather becomes too hot for porridge! This parfait is packed with protein from tofu, greek yogurt, and TVP. It's also got healthy carbs and antioxidants to help fuel your day. You can even make it at night and store it in the fridge if you have an early morning. It's the perfect on-the-go breakfast, and also 100% gluten free and vegetarian!

 Serves 1

Blueberry Acai Tofu Pudding Ingredients (makes 1 serving):

  • 1/2 package silken tofu
  • 2/3 cup frozen blueberries
  • 1/2 - 1/4 tsp acai powder
  • 1/2 tbsp chia seeds
  • splash of soy milk (or milk of choice)
  • sweetener of choice, to taste
Directions for Tofu Pudding:
  • Combine all ingredients in a food processor and blend until smooth.

Parfait Ingredients:
  • 1 serving of Blueberry Acai Tofu Pudding
  • 1/2 cup Greek Yogurt
  • 1 tbsp dry amaranth (to be popped)
  • 1/8 cup TVP (textured vegetable protein)
  • fresh blueberries
  • fresh pomegranate
Directions:

To make your popped amaranth, place a large saucepan with a lid over medium high heat. After about 5 minutes, throw a few drops of water into the bottom of the pan. If the drops dance around the pan, it's hot enough to pop the amaranth. Remove the lid and place 1 tbsp amaranth into the pan. Immediately put the lid back on, and shake the amaranth around the bottom. It will start to pop, and once it stops, immediately pour amaranth into a bowl so it doesn't burn. Set aside.

To soften your TVP, place the TVP in a small bowl and add enough water to just cover it. Add flavorings like vanilla extract, cinnamon, or sugar to sweeten. Microwave for 15-20 seconds and drain off any excess water. Set aside.

To assemble your parfait, first layer about 1/2 of your tofu pudding on the bottom of a tall glass jar. Then pour in your popped amaranth. Layer 1/2 of your Greek yogurt on top of that, then place a layer of fresh blueberries over the yogurt. Add about 3/4 of your remaining tofu pudding mixture over the blueberries, then add the TVP. Spoon the rest of your Greek yogurt over the TVP, then add the remaining tofu pudding. Top with whatever your heart desires! I did more fresh blueberries and pomegranate seeds.
