Chia Pudding with Blueberry Banana "Ice Cream"


Chia is a very unique, highly nutritious seed, and is considered a "superfood" because of it's numerous health benefits and properties. Chia seeds are rich in heart-healthy polyunsaturated omega-3 fatty acids. Just 2 tablespoons contain about 7 grams of fiber, as well as 4 grams of protein, which help keep you full longer between meals. Chia seeds are full of antioxidants and minerals, are gluten free, and when combined with water, can be used effectively as an egg replacement for vegan recipes.

Chia is a unique seed in that it absorbs up to 9 times its weight in liquid, forming a "gel" with a consistency similar to pudding. Add flavorings such as natural sugar, vanilla, honey or maple syrup and you have yourself a delicious and nutritious snack!


Serves 1

For Chia Pudding, you will need:

  • 2 tbsp chia seeds
  • 3/4 cup milk of choice
  • 1/2 - 1 tsp sweetener of choice (I used 1/4 tsp coconut sugar + 1/2 tsp Lucuma powder)

For Blueberry Banana "Ice Cream," you will need:
  • 1 ripe banana, cut into chunks and frozen
  • 1/2 cup frozen blueberries

Directions:

Place the chia seeds in a bowl and pour in the milk and sweetener of choice. Stir well to incorporate the sweetener. Place in your refrigerator, and stir the mixture a few more times over the next 15 minutes, ensuring the chia does not clump together at the bottom. Let the mixture sit for at least 2 hours, preferably overnight, until it comes to the proper consistency.

For the blueberry banana ice cream, let the frozen banana and blueberries thaw slightly on your counter for about 10 minutes, then place in a food processor. Process until the ingredients are incorporated and form a smooth "ice cream." 

Remove the chia pudding from the fridge and layer pudding and ice cream in a bowl. Top with fresh fruit, nuts, or granola.
