Peppermint Swirl Mousse


Peppermint....chocolate.... my sister and mother will agree with me that this is easily the most delicious flavor combination for dessert in existence! This mousse is light, airy and refreshing. It is filled with healthy carbs, fats and protein, and using spirulina not only gives it a beautiful mint color, but also adds a dose of antioxidants and plant based protein to promote a healthy heart, immune system and aide in muscle repair. This is an awesome post workout snack to treat yourself to!



Gluten free, Vegan, Nut free, Dairy free

Serves 1


You will need:

  • about 7 ounces (1/2 package) soft tofu 
    • light firm tofu will also work
  • 1/2 fresh or frozen RIPE banana
  • 1/2 tsp sweetener of choice 
    • coconut sugar, stevia, etc
  • 1/4 tsp psyllium husks
  • 1/4 tsp peppermint extract
  • 1/4 tsp spirulina powder 
    • optional - enhances the green color

Directions:
  • Break apart the tofu and place it in your food processor with the banana. 
  • Process until smooth, scraping down the sides as needed.
  • Add the sweetener, psyllium husks, peppermint extract and spirulina and process again until the mousse becomes a consistent green color. Scrape the sides as needed.
  • Scoop into a bowl and top with raw chocolate! My healthy raw chocolate sauce would be awesome on this too!
