Peanut Butter and Cacao Tofu Mousses
I love how versatile tofu is. There really are so many different ways to use it, just like these creamy, dreamy mousses! Rather than being filled with added sweeteners that spike your blood sugar and lead to energy crashes, they are high in protein, fiber and healthy fats to help give you lasting energy. You could make a larger batch for a rich and decadent breakfast, or treat yourself to a healthy dessert! These are also vegan and gluten free. I topped mine with strawberry banana "nice" cream and cacao nibs!
Serves 1
For the Peanut Butter Mousse, you will need:
- 1/2 package firm or lite firm tofu (about 7 ounces)
- 1/2 tbsp liquid sweetener of choice (agave or maple syrup would work)
- 1 tsp soy milk
- 1/2 tbsp peanut butter
- 1 tbsp peanut flour
- 1/2 tsp psyllium husks (optional, helps make the mousses fluffy and airy)
For the Cacao Mousse, you will need:
- 1/2 package firm or lite firm tofu (about 7 ounces)
- 1/2 tbsp liquid sweetener of choice
- 1 tsp vanilla extract
- 1 tsp soy milk
- 1 tbsp cacao powder
- 1/2 tsp psyllium husks
Directions:
Start with the peanut butter mousse. Cut off 1/2 block of tofu, break it apart into small chunks and place it in your food processor. Add the sweetener and milk and process until the tofu begins to smooth out. You should scrape down the sides with a spatula in order to evenly combine the mousse. Add the peanut butter, peanut flour and psyllium husks and process again until smooth. Feel free to do a taste test and add more sweetener if you choose, then scoop it all into a bowl before starting your cacao mousse.
For the cacao mousse, break apart the other 1/2 block of tofu and add it to your food processor. Add the sweetener, vanilla extract and soy milk and process until it starts to smooth out. Scrape the sides, then add the cacao powder and psyllium husks. Process again until the mousse is smooth and the chocolate is completely incorporated. Do another taste test and add more sweetener if you want. Add this to the bowl with your peanut butter mousse and dig in!
This was delicious with a little banana ice cream to top it off, but they are just as amazing on their own!

Hey, do you think I could use regular tofu instead the soft tofu? Unfortunately I can't find the soft one where I live!

ReplyDeleteNot a problem at all!! The psyllium helps give the mousse a light and airy texture, but since these recipes both use soft tofu (which contains less water than soft) and powders (cacao and peanut) to soak up extra liquid, the psyllium might not be necessary. Give it a try and see how it turns out! :)
