Chocolate Orange Pancakes with a Healthy Raw Chocolate Sauce


Happy Easter everyone!! As a kid, my favorite Easter treat were those Terry's Milk Chocolate Orange Balls that you would smash against the table to break apart the "orange" sections. This easy recipe is an adaptation of those flavors in pancake form! Using only a few ingredients, you have yourself a delicious stack of healthy, chocolate-orange pancakes!
Serves 1 - Makes about 11 pancakes (2.5" each)


You will need:

  • 1 ripe, mashed banana
  • 1 egg + 3 tbsp egg whites
  • 1 tbsp cacao powder
  • juice from 1/2 a navel orange
  • optional: pinch of baking powder


Directions:

Place the egg + egg whites, mashed banana, cacao powder, and orange juice in a food processor. Process until smooth. The batter will be on the watery side.

Heat a pan over medium low and melt some coconut oil. Turn the heat down to low and pour about 1/8 cup of the batter onto the pan. The pancakes will burn easily so make sure the heat isn't too high, and they are also fragile so be careful when flipping. Once there are lots of bubbles on the top of the pancake (about 2-3 minutes), carefully flip it and cook for another 30 seconds to a minute. Repeat with the rest of the batter and stack up tall on a plate!



For the Healthy Raw Chocolate Sauce:
  • 1 tbsp cacao powder
  • 1/2 tsp coconut sugar
  • warm water
Directions:

Combine the cacao powder and coconut sugar in a small bowl. Slowly add in the warm water, stirring constantly, until a smooth texture is achieved. Easy!

    1. The only reason i added the orange juice was for the orange flavor, so you really don't even need any extra liquid! they'll still turn out yummy without OJ or water :)
