Chocolate Mocha Protein Cake Bites
Makes 11 Cake Bites

You will need:
- 2 scoops MRM Chocolate Mocha Veggie Elite Protein
- 1 tbsp coconut flour
- 1 tbsp cocoa powder
- ¼ tsp baking powder
- 1 medium egg
- ½ cup egg whites
- 2 tbsp coconut milk
- 1 tsp Beanilla Coffee Flavor Extract
- Preheat your oven to 350F and spray a cookie sheet with non-stick spray.
- Sift the protein powder, coconut flour, cocoa powder, and baking powder into a medium sized mixing bowl.
- In a separate bowl, whisk together the egg, egg whites, coconut milk and Beanilla Coffee Extract.
- Pour the wet ingredients into the dry, and whisk well until it forms a thick batter.
- Using a spatula, continue to mix the batter until all ingredients are incorporated.
- Use a cookie scoop to measure each cake bite, about 1-2 tbsp for each, and spread evenly on your greased cookie sheet.
- These cake bites won’t spread out as they cook, so flatten them to your desired thickness.
- Bake on 350F for about 15 minutes, until the top of each bite feels firm to the touch.
- Thinner cookies will need less time, thicker cookies may need more.
- Let cool for about 15 minutes, and try not to devour them all at once!
