High Fiber Coconut Protein Loaf



This recipe is a high fiber, high protein, grain free, and gluten free sweet bread loaf - more like a pound cake rather than sandwich bread - so delicious! Using less than 10 ingredients, this loaf makes approximately 10 generous slices, each containing almost 6 grams of fiber and 5 grams of protein!

The bread is moist and fluffy, and isn't crumbly like your normal gluten free bread loaf. The fiber comes from Sweet It Vitafiber Powder, a prebiotic fiber sweetener that I recently reviewed for you! I used MRM French Vanilla Egg White protein powder for an extra protein kick, and Beanilla Black Walnut flavor for a rich, nutty taste to complement the sweetness of this bread.

High Fiber Coconut Protein Loaf

Makes 1 8x4 loaf

You will need:

Directions:
  • Preheat oven to 350F
  • Grease and line an 8x4 loaf pan, or 2 mini loaf pans, with parchment paper
  • Add the Vitafiber Powder to a mixing bowl, and sift coconut flour, Egg White Protein, and baking soda into the bowl, mixing well.
  • In a separate bowl, add the eggs, coconut milk, and Beanilla Black Walnut Extract
  • Whisk, and microwave for about 20 seconds (enough time to warm the liquid to room temperature)
  • Melt the coconut oil and add it to the wet mixture
  • Pour the wet ingredients into the dry and mix well until smooth
  • Don't think you did something wrong if the batter seems thin - that's how it's supposed to be!
  • Pour into your loaf pan and bake for about an hour, or until the loaf is nicely browned on top
  • Remove from the loaf pan and place on a cooling rack
  • Slice and serve with your favorite topping! Great for breakfast with peanut butter, chia jam and coffee!
