Black Forest Cake Mousse


I have several different flavors of my signature mousses, and I always love experimenting because tofu is practically flavorless! You can add really any flavor and the tofu will take it on easily. Now that I've been sent several delicious Beanilla Flavor Extracts to review and create recipes with, I HAD to try Black Forest Cake, which is the delicious combination of chocolate and cherries.

This mousse is high in protein, contains healthy fats, and is low in carbs, making it a great snack to have any time of the day, even with breakfast or post-workout! I particularly like it for dessert after dinner, because I always crave something sweet but don't want to sabotage my day of healthy eating!

It is gluten free, grain free, nut free, dairy free, high protein, low carb, with no added sugars! Pretty much perfection in a bowl :)

Black Forest Cake Mousse
Gluten Free, Grain Free, Dairy Free, Nut Free, No Added Sugar
Serves 1


You will need:

  • 1/2 block (~7 oz) lite firm or firm tofu
  • 1 tbsp cacao powder
  • 5-7 drops liquid stevia (or sweetener of choice)
  • 5-7 drops Beanilla Chocolate Extract
  • 5-7 drops Beanilla Cherry Extract
  • a handful of bing cherries, pitted and chopped
  • 1 square of dark chocolate, chopped (I use Julian Bakery Paleo Chocolate)

Directions:
  • Break apart the tofu into chunks and place it into your food processor
  • Add the cacao powder, stevia, Beanilla Chocolate,  and Beanilla Cherry flavors
  • Process until all ingredients are combined
  • Scrape down the sides of the food processor a few times until all ingredients are incorporated and the mousse is a smooth light brown color
  • Pour into a bowl and stir in the cherry and chocolate pieces!
