Peanut Butter Cup Waffle [Gluten + Grain Free]



Long time no post!! Sorry for the absence, I've been incredibly busy with my internship for the past several weeks and have barely had time to even sleep! But - this morning I was laying in bed on my one day off, contemplating what I wanted to make for breakfast, and this creation popped into my head! I've made peanut butter cup pancakes in the past, but haven't tried the waffle version. Thus, the gluten and grain free Peanut Butter Cup Waffle was born!



Serves 1
Makes 1 large Belgian waffle


Peanut Butter:

  • 1 heaping tbsp coconut flour
  • 1 tbsp peanut flour or natural peanut butter
  • 1/4 tsp baking powder
Chocolate:
  • 1 heaping tbsp coconut flour
  • 1 tbsp cacao powder
  • 1/4 tsp baking powder

Wet Ingredients:
  • 1 egg
  • 1/4 cup egg whites
  • 2-4 tbsp coconut milk (enough to reach a thick but pourable consistency)
  • 1 tsp vanilla extract
  • sweetener of choice, to taste
    • I didn't use any sweetener and thought they were delicious!


Directions:
  • Place the dry ingredients into two separate bowls to create your two batter flavors, then whisk each.
  • Place the wet ingredients in a separate bowl and whisk until combined.
  • Pour half the wet mixture into the peanut butter bowl, and half into the chocolate bowl.
  • Whisk each until the batter is smooth and no lumps of flour remain. 
  • Add more coconut milk if you find the batter too thick.
  • Pour the peanut butter batter in a ring formation around the middle of your preheated waffle maker (not around the outside and not in the center).
  • Pour the chocolate batter in the center of the peanut butter ring, and along the outside.
  • Close the waffle iron and let cook until done.
  • Carefully remove the waffle and top with healthy raw chocolate sauce and peanut butter for an extra chocolate peanut butter punch!
