Warming Chocolate Flax Porridge


I've been doing a lot of experimenting with grain free oatmeal alternatives now that the weather is getting cold and it's all I crave!! This version has to be the best yet. It tastes like an incredibly rich and indulgent warm chocolate pudding, but you don't have to feel guilty! It is high in protein, healthy fats and fiber, all while being free of gluten, grains, dairy, nuts and refined sugar! Enjoy this delicious recipe!

You will need:

  • 2 tbsp ground flax seed
  • 3 tbsp pumpkin puree
    • you could also use mashed banana
  • 1/2 cup coconut or almond milk
  • 3/4 cup egg whites (I used All Whites brand)
  • 1 tbsp raw cacao powder
  • 1/2 tsp vanilla extract
  • sweetener of choice, to taste
Directions:
  • Place all ingredients (besides vanilla extract and sweetener) in a saucepan and turn on the heat to medium.
  • Whisk continuously until the n'oatmeal thickens (trust me, it will!) - about 5-7 minutes
  • Add the vanilla extract and sweetener toward the end of cooking to keep the flavor.
  • Pour in a bowl, top with whatever you want and dig into your grain free chocolate oatmeal pudding!

    1. i don't know, but you could enter the ingredients into a calorie counting app very easily to find out!

    1. Unfortunately I don't think this recipe would work without the egg whites - it's what thickens the porridge and makes it fluffy. I'll keep thinking about a vegan version and update you if I come up with something good! :)
