How to achieve the perfect pancake "Fluff Factor"

Hi everyone! This isn't a normal recipe post, but it's something I wanted to add because I am frequently asked on both my blog and Instagram:

"How do you get your pancakes so fluffy?!" 

After MUCH delicious experimentation, I have found the best method to achieving the perfect fluffy pancake. It is really quite a simple process, so I figured I would write up a post for you all to reference! :)

Pancake "Fluff Factor" in 5 easy steps:


1. Keep your batter thick. 
    • Only add enough liquid until the batter reaches a thick, slightly pourable consistency. I have found that 1 egg 1/2 cup liquid to 3 tbsp of coconut flour works perfectly. A too-runny batter will only make the pancakes turn out thin.

2. Cook "low and slow."
    • Preheat your pan over medium heat to get the bottom hot, but turn the heat down to medium low once you start the pancakes. Make sure the bottom of the pancakes are FULLY cooked, and the top looks "set," before flipping. This usually takes about 3-5 minutes.

3. Keep the pancakes SMALL.
    • I ladle a heaping 2 tbsp onto the pan for each pancake. Each pancake is about 2-3 inches in diameter.

4. DO NOT spread the batter out thin on the pan.
    • Keep the pancakes small and thick. Just let them cook until both sides are nicely browned.

5. DO NOT press down on the top of the pancakes after flipping.
    • Just let them do their thing! No need to squash the poor guys into a sad, dense little pancake :)

So there you have it: the perfect method to fluffy pancakes! You are now free to enjoy ALL the fluffiness! :)

  3. Is it necessarily coconut flour or could it be any flour?

    1. no it could be any flour, but you will have to change the liquid amounts because coconut flour is very absorbent and needs much more liquid than normal flours :) just follow a normal recipe and cook them with these steps!
