Zucchini & Shrimp Fritters




I honestly think zucchini has to be one of my favorite foods, it is just so incredibly versatile!! You can spiralize them to make pasta, grate them to make fritters, "zoats" (zucchini oatmeal), breads, waffles, muffins and desserts, you can make soups, grill them, slice them thin to make a noodle-less lasagna, or simply eat them raw with guacamole or hummus! The possibilities are endless!




This morning I decided to try zucchini fritters. These turned out UNBELIEVABLE. The flavors all blended perfectly and they were crisp on the outside while being warm and soft on the inside. Adding shrimp made me think of crab cakes, but these only contain a handful of all-natural, grain free, gluten free ingredients. 

These fritters can be easily customized to include your favorite spices and other ingredients! They'd be delicious with crispy bacon instead of the shrimp, and you can make bigger fritters to make a "burger"! This recipes can easily be doubled or tripled to feed a family.

You will need:
  • about 1 cup zucchini, grated with excess water removed
  • 6-7 cooked baby shrimp, chopped
  • 1 egg, beaten
  • 1 tbsp coconut flour
  • 1/8 cup white onion, chopped
  • fresh cracked black pepper, to taste
  • red pepper flakes, to taste
  • pinch Himalayan pink salt

Directions:
  • First you will need to grate your zucchini. To remove the water, place the grated zucchini in a tea towel and squeeze out as much water as possible. You could also simply use your hands if you don't have a tea towel.
  • Preheat a large skillet over medium heat and melt a little coconut oil or ghee to coat the bottom.
  • Place the strained zucchini in a bowl, then add remaining ingredients.
  • Stir the ingredients carefully until incorporated.
  • Turn down the heat slightly and scoop a heaping 2 tbsp of the mixture onto the pan - my batter made about 5 fritters.
  • Flatten the fritters with your hands or the back of a fork to form a circle.
  • Cook the fritters for approximately 2-3 minutes, or until the bottom is crispy and golden brown.
  • Flip and cook on the other side until done.
  • Best eaten warm!
