Pumpkin Chocolate Swirl Tofu Mousse
Pumpkin and chocolate could never taste any better than this rich, decadent mousse!! This recipe is so easy to make, and is full of protein, fats and fiber to help keep you full and satisfied throughout the morning or afternoon. Also, vegan and gluten free!
Serves 1
For the Pumpkin mousse, you will need:
- 3 ounces soft tofu
- 1/8 tsp psyllium husks
- 1/2 tsp sweetener of choice (coconut sugar, stevia, etc)
- 1/2 tsp pumpkin pie spice
- heaping 2 tbsp 100% pumpkin puree
For the Chocolate mousse, you will need:
- 1-2 ounces soft tofu
- 1/8 tsp psyllium husks
- 1/2 tsp sweetener of choice
- 1/2 tbsp raw cacao powder
Directions:
Begin with your pumpkin mousse. Break apart the tofu and add it to the food processor, pulse a few times to break it up, the add the psyllium, sweetener, pumpkin pie spice and pumpkin puree. Process until all ingredients are combined and the mousse is a smooth orange color (you will have to scrape the sides down a few times to make sure all the tofu is incorporated. Scoop into a bowl and place in your fridge to chill while you make the chocolate.
For the chocolate mousse, break apart the tofu and add it to the processor. Pulse a few times, then add the remaining ingredients. Blend until it reaches a smooth brown color and all the tofu and chocolate is incorporated.
Take the pumpkin mousse out of the fridge and spoon the chocolate mousse directly on top. Starting from the outer edge of the bowl, begin to swirl the mousses together with a spoon in a circular motion, working your way toward the center of the bowl. Feel free to add raw chocolate chunks to the bowl while you do this - it adds a great texture and crunch to the mousse!

DeleteHello!! This recipe seems so delicious and I'd love to try it, but I don't have any psyllium husks. Do you think there's a substitution I can use, or would it be worth the investment?
ReplyDeleteHello there! You don't really need the psyllium husks to make this recipe work, it'll still be good without it! However it's a great source of a little extra fiber in your diet if you want to try it :)
