Caramel Chocolate Chip Pancakes [Gluten + Grain Free]
I honestly have to say these were probably the most delicious pancakes I've ever eaten in my life. They are sweet, moist, and fluffy, filled with fiber, protein and healthy fats. Coconut flour is definitely my favorite flour, I love the sweet flavor and high fiber content, which helps keep my sweet tooth at bay and my tummy full and happy! These pancakes are gluten free, grain free, vegetarian with vegan options!
Serves 1 - Makes about 6, 4-inch pancakes
You will need:
- 1/4 cup coconut flour
- 1 egg
- sub flax egg for vegan (1 tbsp ground flax + 3 tbsp water)
- 1/2 cup egg whites*
- 1/3 cup milk of choice
- 1 tsp maca powder
- 1 tsp mesquite powder
- 1/4 tsp sweetener (coconut sugar, stevia)
- 1/4 tsp baking soda
- raw dark chocolate chunks or chocolate chips
Directions
- Preheat a pan over medium heat and melt a little coconut oil.
- In a bowl, whisk together the egg (or flax egg), egg whites, and milk.*
- Sift the coconut flour into a separate bowl, then add the maca powder, mesquite powder, sweetener and baking soda and whisk to combine.
- Pour the wet ingredients into the dry and whisk extremely well until the batter is completely smooth.
- Stir in the chocolate now.
- Pour 1/4 cup of the batter onto the pan and turn the heat down slightly.
- Let cook until bubbles form on the top, and the bottom is browned when you lift it with a spatula.
- Flip and cook until both sides are nicely browned.
- Repeat with the rest of the batter and dig in!

*If you want these completely vegan, use [2 flax eggs + 1 cup of non-dairy milk], instead of [1 egg, 1/2 cup milk and 1/2 cup egg whites].
Hai casey, i wanna ask. Can I sub the coconut flour with oat flour or all purpose gf flour? And about the egg whites, how many egg do you need to get 1/2 cup egg whites? Thanks in advance :)
ReplyDeleteI'm not sure subbing the same amount of flour would work using the same amount of liquid, because coconut flour is extremely dense and absorbent, so using 1/4 cup oat flour would make an extremely watery batter. You'd have to decrease the liquid quite a bit, or increase the amount of oat flour. I would try the recipe with 1/2 cup oat flour (with the same amount of liquid) rather than 1/4 cup coconut and see how that goes! :) As for the egg whites, I would guess maybe 4-6 eggs would give you 1/2 cup egg whites. I use egg whites from a carton so i'm not 100% sure though!
