Basic Vanilla Coconut Flour Waffles [Gluten Free] + 10% off Teami Blend Tea!


Waffles. The all-American breakfast! I bought a waffle-iron a few weeks ago and the first attempt epically failed. The texture was totally wrong. They turned out dry and crumbly, not at all like a traditional waffle texture that is warm and soft on the inside. I'm still not even sure what I did wrong, it could have been too little liquid or not enough oil, and they even stuck to the iron, leaving sad little clumps of half-cooked batter for me to stare at forlornly...

However, I digress. After a few weeks of walking past my waffle iron silently begging to be used, I decided to try again. While these waffles aren't perfectly crispy on the outside, they are soft and doughy and absolutely delicious, so I thought I would share the recipe with you all!

These waffles are high in fiber, protein and healthy fats, while being gluten free, grain free (paleo) and vegetarian, with vegan options!



Serves 1


You will need:

  • 1.5 tbsp coconut flour
  • 1 tsp sweetener of choice (coconut sugar, stevia, etc)
  • 1/4 tsp baking soda
  • 1 egg
    • sub 1 flax egg (1 tbsp ground flax + 3 tbsp water) for vegan
  • 5 tbsp egg whites
    • sub 1 flax egg (1 tbsp ground flax + 3 tbsp water) + 2 tbsp non-diary milk of choice
  • 1 tbsp milk of choice
  • 1 tsp coconut oil
  • 1 tsp vanilla extract


Directions:

  • Coat your waffle iron with coconut oil and let it get hot.
  • Bring all liquid ingredients to room temperature. For these waffles, I used 1 flax egg and 5 tbsp egg whites, but feel free to use whatever combination you like.
  • Combine egg, egg whites (or vegan replacements), milk, coconut oil and vanilla extract in a bowl and whisk well until combined. 
  • Sift in the coconut flour, sugar and baking soda, then whisk until the batter is smooth and clump free.
  • Let the bater sit for a few minutes, then pour it into the waffle wells and smooth the batter until it covers the wells.
  • Close the waffle iron and let it do it's magic, while you stare/pace back and forth impatiently with growling stomach (or is that just me?)
  • Once the waffles are done, carefully remove them from the iron and top with fresh fruit, maple syrup, nut butter or anything else you like!

I'm not sure if that would work, because coconut flour is a very tricky flour and requires a very specific amount of liquid to get the consistency right. you could try 3 or 4 tbsp of chickpea flour, because it's not as absorbent as coconut flour. try to use enough chickpea flour to get the batter to a thick and slightly pourable consistency. Let me know if it works for you! :)
