Gluten Free Vanilla Maca Buckwheat Pancakes with a Chocolate Coconut Ganache
Pancake Sunday everyone!!! These are super fluffy and moist, and the addition of the maca powder will give you a great energy boost to stay focused!
Serves 1. Makes about 4 pancakes
You will need:
- 1/4 cup Buckwheat Flour
- 1 tsp maca powder
- 1/2 tsp coconut sugar (or sweetener of choice)
- 1/4 tsp baking powder
- 1/4 cup egg whites**
- 3-4 tbsp milk of choice
- 1 ripe banana
- 1 tsp vanilla extract
Directions:
Heat a pan on low and add a little coconut oil.
Cut your banana in half, mash one half into a puree and save the other half for your topping.
In a mixing bowl, combine the flour, maca powder, sugar, and baking powder and whisk until combined.
Next combine the egg whites, soy milk, and vanilla extract. **If you want a vegan option, increase the milk to 1/3 cup (or a little more) and add 1 flax egg.
Add the mashed banana and whisk until combined.
Pour about 1/4 cup of the batter onto the pan, increasing the heat to medium low. Let cook until bubbles form on the top, then flip and cook until both sides are browned. Repeat with the rest of the batter, using a little less batter each so the pancakes stack up nicely.
For the Chocolate Coconut Ganache, you will need:
- 1 tbsp raw cacao powder
- 1/2 tbsp melted coconut butter
- 1/2 tsp coconut sugar
- warm water
Directions:
Place the cacao powder in a small bowl and add warm water, stirring constantly, until you get a sauce. Add the sugar and stir again. Add the melted coconut butter and stir to combine. You may need to add a bit more water to make it pourable because the coconut butter starts to solidify and get a bit clumpy.
Pour all over your pancakes and top with the rest of the banana, and whatever else you want!
