Berrylicious Banana "Nice" Cream


This version of my banana "nice" cream is loaded with antioxidants from a couple different super-berries! This makes for a deliciously light and sweet dessert!



Serves 1

You will need:

  • 1 RIPE, frozen banana
  • 1/2 cup frozen blueberries
  • 2 tbsp milk of choice (I used soy)
    • feel free to adjust to get the right consistency
  • 1 tsp acai powder

Directions:


At least 5 hours prior to making the ice cream, peel and chop your banana into small 1/2 inch pieces and place the slices (in a single layer) into a large zip lock bag. Put this in your freezer until you're ready to make the ice cream.

Remove the bananas and from the freezer and let them sit on the counter for a minute to thaw slightly. Place the bananas, blueberries and milk in your food processor and process. You will have to scrape down the sides a few times to get everything incorporated. Be patient with this, as it takes a while for the bananas to smooth out and become more of an ice cream consistency. You may need to add more milk to smooth it out, just use your judgement. 

Add in the acai powder once the ice cream is smooth, and process until everything is evenly incorporated. Top with whatever you like or eat as is! Delicious either way!
