Vanilla Protein Pancakes [Grain Free, Gluten Free]
These pancakes are great gluten free option for those who are avoiding grains, as they are made with garbanzo bean flour! They are packed with protein, and are great for a post-workout meal. Change the flavor of your protein powder to make any flavor pancake you want!
Serves 1 - Makes about nine 2-inch pancakes
You will need:
- 1 scoop Vanilla protein powder (about 30g)
- 2 tbsp garbanzo bean flour
- 1/4 tsp baking powder
- 1/2 tsp coconut sugar or stevia
- 1/4 cup milk of choice
- 1/4 cup carton egg whites
Directions:
In a mixing bowl, combine protein powder, garbanzo bean flour, sugar and baking powder and whisk until combined. Add the milk and egg whites and whisk until a batter forms. You may need to adjust the amount of liquid to make the batter smooth enough to pour.
Heat a pan over medium heat and melt a little coconut oil. Once the pan is hot, turn the heat down to medium-low and pour a heaping tablespoon of the batter onto the pan. You can make the pancakes bigger by using 1/8 or 1/4 cup of batter for each pancake, if you would rather. Let the pancakes cook until bubbles form on the top, then flip and cook until both sides are browned. Repeat with the rest of the batter and stack up tall on a plate!
Serve with fresh fruit and lots of maple syrup.
