Vanilla Blueberry Acai Tofu Pudding



This is a super easy recipe, perfect if you're low on time and need an on-the-go breakfast! Make it the night before and store it in the fridge, then wake up, grab it, and go! If you don't have Mason's jars I highly recommend you get some, they are perfect containers for meals like this, even overnight oats! This pudding also makes an easy snack between meals if you get hungry, since it's packed with healthy fats and protein.

Place all ingredients in a blender and process until smooth. Pour into a bowl and top with fresh fruit, nuts, granola, yogurt, or anything else you want!
