Raw Figgy Coco-Peanut Buckwheat Bliss Balls


The name says it all - figs, coconut, peanuts, and buckwheat are the only ingredients in these delicious raw energy balls! They are gluten and dairy free, vegan, and loaded with healthy fats and carbohydrates. They are perfect for when you have a busy day and need a quick boost. The natural sugars from sweet figs make these taste more like dessert, but they're unbelievably healthy.

Place dried figs in a bowl and cover with water. Place the buckwheat groats in a separate bowl and cover with water, leaving about an inch of water above the groats. Let both sit for at least 4 hours, or overnight.

Drain the water from the figs and cut off any woody stems that are still remaining. 

Strain the buckwheat groats well to wash off the gooey film that remains after soaking.

Place the peanuts in your food processor and pulse until they have broken up slightly. Add the buckwheat groats and processes until combined, and most of the peanuts and groats have broken down and the dough looks smooth. Add your figs and coconut. Continue to process until the dough starts to form a large ball in the processor. If the dough feels too sticky, you can add more shredded coconut.

Begin to form your bliss balls, breaking off enough dough to make approximately 1-inch balls. Place on a tray and refrigerate, ideally for 24 hours, so the balls can harden and set properly. Roll in more coconut if you wish, then individually wrap each ball for easy transport!
