Raw Cacao Buckwheat Energy Balls


Gluten-free, nut-free energy bars are very hard to come by, especially natural ones that don't have added ingredients that upset my stomach. These healthy buckwheat-based energy balls are perfect on-the-go snacks. They are allergen friendly, containing no gluten, nuts, dairy, or soy. They are packed with fiber and healthy, whole grain carbohydrates. All this, AND they taste amazing!!!!

Soak your dates in warm water for about 30 minutes to soften them, and remove the stones. Soak your buckwheat groats in water for about 5 minutes, mixing with your hands so they become softened slightly. Drain liquid from the buckwheat and place in a food processor. Pulse the buckwheat to break up the pieces, but don't grind so fine you make a flour. Add your dates, cacao powder and agave nectar and process until the mixture becomes sticky. You may need to add another date or 2 until you get the right consistency, just use your judgement. Take a palmful of the mixture and work into a ball with your hands. Mine were a little smaller than a golf ball. Roll in your favorite superfoods, I used goji berries, goldenberries, and shredded coconut.
