Pumpkin Pie Buckwheat Porridge


This pumpkin pie porridge is rich and warming, perfect for chilly winter mornings with a steaming mug of tea. It tastes so much like my favorite pumpkin pie, such a treat to enjoy! And it's a great way to get an extra serving of vegetables into your day :)




For my Pumpkin Pie Buckwheat Protein Porridge, you will need:


  • 1/4 cup buckwheat flakes
  • 1/4 cup TVP (I use this for added protein)
    • this recipe will also work with 1/2 cup oats or buckwheat flakes
  • 1 cup water
  • 1 tsp pumpkin pie spice
    • if you don't have pumpkin pie spice on hand, use:
      • 1/4 tsp cinnamon
      • 1/4 tsp ginger
      • 1/4 tsp nutmeg
  • 1/2 cup pumpkin puree
  • 1/3 cup egg whites
  • 1 tsp vanilla extract
  • toppings of choice

Directions:

In a small sauce pan, bring water to a boil. Add your buckwheat and TVP (or oats) and lower heat, allowing porridge to thicken, approximately 3-5 minutes. Stir in your pumpkin pie spice and vanilla. Let this cook another minute or so, then add in the pumpkin puree and stir well until combined. You may need to add more water if it is too thick. Let this cook another minute, then pour in your egg whites, stirring until combined. Stir until the porridge becomes fluffy, then add your favorite toppings and enjoy!!

    1. the only place in the United States that I've found them (once) is a store called Ocean State Job Lot in Massachusetts. I don't know where you're from, but England sells a brand called Big Oz that sells buckwheat flakes :)
