Gluten Free Cacao Peanut Butter Pancakes
It's the last Sunday of 2013, so I had to make this batch of pancakes special. The recipe is super simple, with only a handful of ingredients.
Raw cacao powder, coconut flour, banana, and egg whites are all that make them up, so you can have a delicious stack of chocolate pancakes in no time!
Raw cacao powder is the unprocessed version of chocolate, so the flavor is slightly more bitter than your regular cocoa powder. I used banana to sweeten this recipe. Cacao powder is chuck full of health benefits, including vitamins, minerals and antioxidants that promote cardiovascular health; it has also been linked with improved digestion and can enhance physical and mental well-being. I love raw chocolate!!
Makes 6 - 3" pancakes
You will need:
- 2 tbsp coconut flour
- 1 ripe banana
- 1/2 cup egg whites
- 1/2 - 1 tbsp raw cacao powder
- 1/4 tsp baking powder (optional - I like my pancakes fluffy)
- coconut oil for frying
- peanut butter
- banana slices
- strawberry slices
Directions:
Place a pan on your stovetop and turn the burner to medium heat. Scoop about 1 tsp coconut oil into the pan and let melt.
Mash about 3/4 of your banana into a complete puree, trying to get out as many clumps as possible. Set aside the remaining banana for your topping.
In a mixing bowl, combine coconut flour, banana puree, egg whites, cacao powder, and baking powder (if you're using it). Let sit for about 5 minutes so the coconut flour can absorb the liquid. Once the pan is hot and the oil is melted, scoop about 2 tbsp of the batter onto the pan and swirl the top with the back of a spoon to form a 3-inch pancake. Depending on the size of your pan, you may be able to fit 2 or 3 pancakes at a time. Wait about 3 minutes until the top of the pancake starts to bubble, then flip and cook for another minute or so. Repeat until the batter is gone! I was surprised at how many this recipe made - 6 pancakes all for me?! I'm not complaining ;)
Top with your banana and strawberry slices and drizzle everything with peanut butter.
