Apple Pie Buckwheat Porridge


This is another delicious variation of my Basic Vanilla buckwheat porridge. Cooking the apple down with the buckwheat really makes all the difference for the texture of the porridge. Add a little apple pie spice, and it's like eating a big (and healthy!) slice of apple pie in a bowl!



For my Apple Pie Buckwheat Protein Porridge, you will need:


  • 1/4 cup buckwheat flakes
  • 1/4 cup TVP (I use this for added protein)
    • this recipe will also work with 1/2 cup oats or buckwheat flakes
  • 3/4 - 1 cup water, depending on your preferred consistency
  • 1/3 cup egg whites
  • 1 apple
  • 1 tsp vanilla extract
  • 1/2 tbsp apple pie spice
  • toppings of choice

Directions:


In a small sauce pan, combine milk and water and bring to a boil. Add your buckwheat and TVP (or oats) and lower heat, allowing to thicken, approximately 3-5 minutes. While this cooks, slice your apple and chop 1/2 to 3/4 into small pieces, saving the rest for your topping. Stir your chopped apples into the buckwheat, and add in vanilla extract and apple pie spice. Allow to cook for another few minutes until the porridge has thickened slightly, then pour in the egg whites. Stir until the egg whites cook and the porridge becomes fluffy. Slice the other section of your apple and add any other toppings you like!
