Mint Chocolate Chip Banana "Nice" Cream


Mint Chocolate Chip ice cream is my absolute favorite flavor of all time. While regular ice cream is loaded with added sugars, unhealthy fats, and lots of milk that upsets my stomach, this version, containing just a handful of ingredients, is chuck full of natural carbs and healthy fats. I used 2 all-natural secret ingredients to give this nice-cream it's beautiful green color - can you guess? Read on to find out!

At least 5 hours prior to making the ice cream, peel and chop your bananas into small 1/2 inch pieces and place them (in a single layer) into a large zip lock bag. Put this in your freezer until you're ready to make the ice cream.

Remove the bananas and from the freezer and let them sit on the counter for a minute to thaw slightly. Place the bananas and milk in your food processor and process. You will have to scrape down the sides a few times to get everything incorporated. Be patient with this, as it takes a while for the bananas to smooth out and become more of an ice cream consistency. You may need to add more milk to smooth it out, just use your judgement. 

Once the ice cream is somewhat smooth, add in the avocado, spirulina (if you're using it), and peppermint extract. The avocado and spirulina will give the ice cream that beautiful "mint green" color, while adding a dose of healthy fats and protein. Be sure not to add too much peppermint extract - a little goes a LONG way! Process again until everything is incorporated and the ice cream is a smooth green color. 

Scoop into a bowl and stir in your cacao nibs or chocolate chips. Sprinkle more cacao nibs on top and dig in!!
